TaterSweet™ Shrimp Cocktail

Ingredients

2 lbs
9 oz (1 jar)
2 cloves

Shrimp (medium or large - peeled and deveined - frozen or thawed)
TaterSweet™ Sweet & Sour Gourmet Dressing
Garlic (peeled and bruised)
Lemon (cut into wedges)
Onion (medium size)
Seafood Seasoning (such as Old Bay)
Salt
Black Peppercorns (whole)

Directions

>  Pour TaterSweet™ into serving bowl, cover and chill in refrigerator.
>  Fill a large bowl halfway with ice, then cover ice with cold water, set aside.
>  Fill a large stockpot halfway with cold water.
>  Cut lemon into wedges, squeeze into stockpot, also add the rhinds.
>  Peel garlic and bruise (smash), add to stockpot.
>  Slice onion, add to stockpot.
>  Add seafood seasoning, salt and peppercorns to stockpot and stir.
>  Bring stockpot to a boil, reduce heat and simmer for 15 minutes, stirring occasionally.
>  Remove stockpot from heat source and add shrimp.
>  Let shrimp cook in the hot water:
*Frozen: 3-4 minutes (until shrimp turns pink and is cooked through)
*Thawed: 5-8 minutes (until shrimp turns pink and is cooked through)
>  Transfer cooked shrimp to ice water bowl using a slotted spoon, let stand until chilled.

To Serve

Arrange chilled shrimp on a serving platter around bowl of TaterSweet™ or hang several shrimp on the rim of cocktail glasses filled with TaterSweet™ and alternate with glasses of regular (red) cocktail sauce for contrast in look and taste on your buffet. Garnish with additional lemon wedges and parsley if desired. ENJOY!
