Ingredients

Chicken (5-6 thighs, 2-3 breasts) .......... 1 1/2 lbs

TaterSweet™Sweet & Sour Dressing .. 1/2 cup

Coconut (flaked or shredded) .................... 1 cup

Coconut Flour ......................................... 1/4 cup

Breadcrumbs .......................................... 1/2 cup

Directions

>  Preheat oven to 350°, place oven rack in center of oven

>  Line a baking pan with parchment paper (or coat with cooking spray)

>  Rinse chicken and pat dry, place in a lagre bowl and set aside

>  In a shallow bowl, combine coconut and breadcrumbs mixing well

>  Add coconut flour to chicken and toss to coat thouroughly adding salt & pepper to taste

>  Add TaterSweet™Sweet & Sour Dressing to bowl of chicken and toss until evenly coated

>  Dredge chicken pieces in coconut/breadcrumb mixture and place evenly spaced in baking pan

>  Bake on center oven rack for 50-55 minutes (until internal temp is 165° and juices run clear)

*Let rest 5 minutes...ENJOY!
